Witches Brew (Green Pea Soup)

Make this spooky Witches Brew Green Pea Soup for a fun fall meal or appetizer. Made with peas, potatoes, and baby spinach. This green pea soup will become a family favorite for Halloween.

It may not look pleasing, BUT this soup is delicious! You will not believe how good this green pea soup is! I must say I totally enjoyed that spooktacular green color. Not to mention, my kids were delighted to eat this soup.

This soup is warming, healthy, nourishing, and filling. What’s not to love? Plus, you’ll want to get your party started by offering this tasty soup, which will keep your guests happy all the way ’til the witching hour.

The great thing about this soup is that you can throw in any additional green veggies like broccoli for a more wholesome and satisfying taste.

How to make Witches Brew Green Pea Soup:

  1. Heat the oil in a large soup pot and cook the onions, garlic, and potatoes. Stir often, for about 5 minutes, or till potatoes are semi-soft.
  2. Add green peas, baby spinach, salt, and ground black pepper and mix it or stir it for a minute, then add vegetable stock. Bring to a boil and then simmer for 10-15 minutes or until everything is soft.
  3. Blend the soup until smooth with a regular or immersion blender and blend it until smooth and creamy texture.
  4. Cook blended soup until it boils.
  5. In a medium pan, heat oil and add mushrooms and salt. Sautéed for 1 minute, then add vegetable stock and cook mushrooms until soft. Don’t sauté the mushrooms too long face-side down, or they will lose shape.
  6. Remove mushrooms from the vegetable stock and set aside.
  7. Pour soup into the serving bowls and garnish it with cream, micro rainbow mix, black pepper, crushed red peppers, and sautéed mushrooms.

I decided to make the popular skull mushrooms. I thought it would be the perfect garnish for this witches brew. They were easier to make than I anticipated! Once you start, you can’t stop.

sautéed mushrooms:

  • 1 tbsp olive oil
  • white or brown mushrooms 
  • 1 cup vegetable stock
  • 1/2 tsp salt 
  1. For the skull mushrooms: You can use both white and brown mushrooms. I like the contrast of using both. You want to start by cleaning and cutting the mushrooms in half. If needed, cut down the stems to straighten the edge.
  2. I used a small piping tip to poke the eyes out. You can also use a standard-sized straw to poke holes for the eyes, but your eyes will be much smaller.
  3. Make 2 slits for the nose, and I also made slits on the stem of the mushrooms to make them look like teeth.
  4. In a medium pan, heat oil and add mushrooms and salt. Sautéed for 2 minutes, then add vegetable stock and cook mushrooms until soft.
  5. Remove mushrooms from the vegetable stock and set aside for garnish.

TIP: Don’t sauté the mushrooms too long face-side down, or they will lose shape.

Ingredients
