Cranberry Orange Cookies Dipped in White Chocolate

Ingredients
  

  • 8 tbsp unsalted butter, softened
  • 1/2 cup sugar
  • 2 orange zest, finely grated
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/3 cup all-purpose flour
  • 1/3 cup chopped dried cranberries I used Ocean Spray Dried Cranberries
  • 1 10oz bag Ghirardelli white melting wafers

Instructions
 

  • In a large bowl, cream together butter, sugar, and orange zest. When it's well combined add the egg yolk and vanilla extract. Mix well.
  • Add the salt and flour and mix until combined.
  • Add the cranberries. Use your hands to knead the dough until it comes together and forms a ball. Work the dough until it comes together. 
  • Shape dough into a log about two inches in a diameter and 8 to 9 inches long. Wrap in plastic wrap and refrigerate for two hours or longer.
  • Preheat oven to 325°F.
  • Cut slices of cookie dough about 1/3 inch thick. If one side of the log is flat, roll it a little to make it round again.
  • Bake for about 12-14 minutes, until barely golden at the bottom edges. Let the cookies cool.
  • Melt the white chocolate wafers (follow instructions on the package). Dip half of the cookie into the melted chocolate and place them on parchment to set. And Enjoy!
