R e c i p e • Where are my lemon lovers at! These Shortbread Lemon Cookies are so GOOD! 💛 I hope you get the chance to make them this summer. Recipe below 👇 

Lemon Shortbread Cookie Dough:
🍋1 cup (227g) unsalted butter, softened
🍋1/2 cup (100g) sugar
🍋1 tablespoon vanilla extract
🍋1/2 teaspoon kosher salt
🍋1/2 cup (100g) lemon zest
🍋1/4 cup cornstarch
🍋1 3/4 cups all-purpose flour

Lemon Glaze:
🍋1 cup (120g) powdered sugar
🍋2 tablespoons fresh lemon juice

Garnish:
🍋lemon zest
🍋fresh thyme leaves

1. Cream together butter, sugar, vanilla extract, salt, and lemon zest on medium-high speed until pale and fluffy.

2. Add cornstarch and flour- mix until dough just pulls together. Do not over mix.

3. Wrap dough in the plastic wrap and chill for 1 hour.

4. Dust your work surface with flour. Roll out dough and cut out cookies.

5. Bake for 15 min, until cookies are just slightly golden on the foot. They should be pale. Cool before glazing.

6. Sprinkle lemon zest and thyme leaves on top of wet glaze. Once glaze is firm, cookies can be stacked for storage.

My husband lost his best friend, his brother, on April 7, 2011. Both deployed multiple times together, and they fought in combat during the battle for Fallujah in November 2004. I remember my husband coming home early from work one day and saying that Jason was training for another deployment and he was leaving soon. We took him out to lunch. We ate, shared funny stories, laughed, and said our goodbyes. I remember my husband saying, "Take care, man and come home safe." Little did we know that would be the last time we would see Jason. Jason A. Rogers, you will always be loved and remembered.

My sweet friend Maria @movingwiththemilitary explains this day of respect and remembrance beautifully:

Memorial Day. 

A day that holds a profound significance for my military family and me. 

It is a moment when we pause, not only to remember, but to honor and embrace the immeasurable sacrifice of those who have selflessly given their lives in service to our nation.

For us, Memorial Day is not just another holiday or a chance to enjoy a long weekend. 

It is a solemn reminder of the deep-rooted commitment, unwavering bravery, and ultimate devotion displayed by our fallen heroes. 

These courageous men and women, bound by duty, honor, and love for their country, stood at the forefront, protecting the ideals and freedoms we hold dear.

On this hallowed day, we gather at memorials and cemeteries, placing flags, flowers and coins upon the resting places of our fallen heroes. 

We come together not only to mourn, but to celebrate their lives, embracing the memories that sustain us and sharing stories that keep their spirits alive.

🙏 May we never forget the fallen, may we cherish their memories, and may we strive to be worthy of the sacrifice they made.

R e c i p e • Every year, around this time, we take the kids to the strawberry fields. With all the freshly picked strawberries, we’ve been making strawberry jam, strawberry fruit bowls and now we have added Strawberry Mousse Tarts to the list 🍓❤️ If you love strawberries this recipe is for you!

INGREDIENTS

For the crust:
🍓2 cups crushed Graham crackers
🍓3/4 cup shredded coconut
🍓2 tablespoons sugar
🍓1/2 cup butter, melted

For the filling:
🍓3 cups (425 g) fresh chopped strawberries
🍓1/2 cup of water
🍓1 ¾ cups (420 ml) heavy whipping cream
🍓4 ounces (113 g) cream cheese
🍓1 cup (120 g) confectioners’ sugar, sifted
🍓1 tablespoon vanilla extract
🍓½ teaspoon salt
🍓1 package or 4 teaspoons of unflavored gelatin powder
🍓4 tablespoons cold water

Garnish:
Fresh strawberries
Pistachio nuts, crushed
Edible flowers
